Lush Vegan Food – new vegan business

Rebecca from Lush Vegan Food based near Fareham in Hampshire has just added a shop her business facebook page. Currently they are collect only (fresh or frozen) but she will look into postage options soon. Muffins, torte and banana bread are amongst the offerings so far, with the range sure to expand soon.

She has lived in good ole Stubbington all her life, and last month she quit her 14 and a half year job to do something she loves and hopefully will be successful in. There is a beach nearby, so why not make a day of it at the beach and collect some sweet treats to take home.

“I hope my cakes are not just for vegans but for anyone dairy free, wanting to eat more plant based products or just people who love cake! I am not your average typical vegan ha and have the love handles and sweet tooth to prove it! I would appreciate all your support, and spreading the word around for me. I am literally bricking it ha as never run my own business before, but did a lot of research, am approved by environmental health and running my little venture from my trusty kitchen. The support people means everything to me.”

Rebecca hopes to branch out to extend her range with frozen meals too!

Orange Coconut Cake and Muffins

Been having a play with this recipe over the last couple of days to see if I can alter it to make my own version. Here is the link for the original recipe on vegweb. I followed as per recipe except using muscavado sugar. See picture of cake and a slice of it above (with foraged blackberries from the autumn).

It was delicious. I have tried it before with white sugar and no almonds and it was also yummy, in fact I preferred it.

So today I tried to make muffins with my original changes to the recipe and they were even better. I used white sugar, and no almonds. If you like coconut, you should like these. Of course you could put icing on top, or serve as a cake with custard or cream. Not as light as a traditional cake, but still cake like. Here is my slightly changed recipe.

Orange Coconut Muffins (or cake)

1 ripe banana

65g sugar

120ml orange juice

1/2 teaspoon vanilla extract

140g self raising flour

1/2 teaspoon salt

35g unsweetened shredded coconut

Preheat oven to gas 4.

Mash banana and sugar together. Stir in orange juice and vanilla extract.

Then sift in the flour, baking powder and salt. Fold in and then stir in the coconut.

Pour batter into a sandwich ‘tin’ or 6 muffin tray. I use silicon bakeware, so it doesn’t need greasing, but if you use tin, please grease first.

Bake at gas 4 for 30 minutes, or until light golden brown (and cake tester inserted in middle comes out clean). My times are based on a gas cooker using silicon bakeware. Please note that times may vary with oven and tins used.

Makes 6 muffins or 1 cake which can be divided into 8.

I expect to try a few different versions.
